A Sparkling Start — L’Antica Quercia «Su Alto» (Col Fondo, Italy)
We begin in the hills near Venice, where the grapes grow high in the Dolomites. This sparkling wine is made in a natural way — no filtering, no shortcuts. Just patience and mountain air.


In the glass: apple, lemon, herbs, bread crust, and soft bubbles.
On the plate: tuna tartare with avocado, quail egg, ponzu sauce, and black caviar.

Amber Twist — Daschbosch Skin Contact (Chenin Blanc, South Africa)
Next stop: South Africa, in the Breedekloof Valley.
Here, the Chenin Blanc grapes grow in deep soils shaped by old river floods. The wine stays in contact with the grape skins, which gives it a special amber color and rich taste.


In the glass: orange peel, rooibos tea, dried apricot, wildflowers, spices.
On the plate: burrata with seasonal tomatoes, roasted plums, and tkemali sauce.

Juicy Escape — La Pierre «Raisins Gaulois» (Gamay, France)
Now we travel to Beaujolais, France, where the Gamay grape grows on granite and slate hills. This wine is light, wild, and full of life — like red fruit juice for grown-ups.


In the glass: cranberry, sour cherry, a little wild, super juicy and fresh.
On the plate: chicken liver parfait with pickled onion, French mustard, cherry sauce, pickles, and brioche bread.

Deep Finish — Domaine de la Chevalerie «Franco de Porc» (Cabernet Franc, France)
Our final stop is the Loire Valley in France.
This vineyard has been family-owned since the 1600s. The vines grow among trees, flowers, and herbs. Everything is organic — and the wine has soul.


In the glass: blackcurrant leaf, cranberry, forest herbs, soft chalky tannins, and an earthy finish.
On the plate: beef tongue with mushrooms, spinach, green peas, mashed potatoes, and BBQ sauce.
